For the Mac, Audio Hijack Pro is the best way to record Skype (or any other audio for that matter). It has journalist-friendly features such as allowing you to put your voice on one channel and the caller on the other (a lifesaver, if they cough!).
Garageband also has some neat voice recording features, both on the Mac version (free with a new machine) or on the iPad version.

For Android I would add TapeMachine – it allows you to record voice (not phonecalls) and edit it very easy.
